Joe Bains, Sue Style, Kevin Richmond's Culture Roundup

Broadcast on:
15 September, 2015

Joe Bains, a Basel/London based, internationally and professionally credited stand-up comedian, joined us in the studio to recount his tales of "The Road". Most recently he was in Edinborough where he participated as a performer in the Fringe Festival. He spends his time writing books, taking care of his child and of course, sharpening his comedy chops. His book, "Healthy Eating To Lose Weight Fast" (not a comedy book...seriously) can be found on Amazon or on his website. When in Basel, he can be found at Toastmasters events based at Centrepoint Basel or at Social Zebras events focused on personal development and general awesomeness. On the web, find his YouTube channel to watch his comedy sketches in the comfort of your home.

It's that time of the year again when the forest floors sprout spore-ific sumptuousness and Sue Style was on board to tell us all about the mushroom experience in Basel. Though the rains which are requisite for an abundant crop have been absent, it's still a fantastic experience to go to your nearby forest and forage. Once finished, visit one of the Pilzkontrolle stations throughout Baselland to make sure you only take home the ones fit to eat.

CROUTES AUX CHAMPIGNONS - Mushrooms on toast (from A Taste of Switzerland, by Sue Style) Soften 1 small chopped onion in butter. Clean and slice about 500g mushrooms (cultivated and/or wild) and add to the pan with salt and pepper to taste. Cover the pan and cook 5 minutes or until the mushroom juices run. Uncover the pan, raise the heat and cook hard to evaporate juices. Add 200ml (a scant cup) of dry white wine and cook hard till wine evaporates. Stir in 125ml (1/2 a cup) of cream and simmer a few minutes more. Toast some good bread and lay slices in an ovenproof dish. Spread mushrooms on top of toast, sprinkle with 4 tablespoons grated Sbrinz or Parmesan and place under a hot grill (broiler) till golden and sizzling.

Sue will have a mushroom workshop coming up on Thursday 22nd October, 9.30 a.m. to 1.30 p.m. in her Alsace kitchen. Full details and sign-up at: www.suestyle.com/workshops
